STYLE Keeved Cider / Naturally Sweet
A subtle natural carbonation prickles your tongue while lots of residual apple sugar brings a rich, appley sweetness, balanced by acidity and soft tannins.
Every element of the orchard can be tasted in this rich, naturally sweet cider; from apple to blossom to understory. Named after the Huxham orchard where we picked the largest proportion of apples, including Devonshire Buckland, Cornish Longstem & Catshead. It also contains a blend of bittersweets and bittersharps from Woodrow orchard - lots of Brownsnout, Dabinett and Yarlington Mill. We macerated the fruit for 48 hours then milled, pressed and keeved a syrupy, amber juice. The juice racked from under the chapeau brun fermented extremely slowly in the depths of a cold winter and has continued to ferment imperceptibly since bottling in June 2021.
