Appellation is made like Champagne, with apples instead of grapes. An even blend of sharp and sweet apple varieties handpicked at perfect ripeness from each of the orchards we foster in the Exe valley. A long, slow native primary fermentation was followed by secondary fermentation with champagne yeast and a further 18 months ageing on the lees in the bottle. We riddled & disgorged each bottle by hand and added only 4.5g/l sugar dosage (extra-brut).
