Crisp- Green Fruits - Herbs

Lovely easy drinking - dry, crispy with good body and a spicy aniseed bouquet, green fruits and herbs, is quite resinous with an ample mouth feel savoury flavours, pepper & plum.


Grapes are harvested at night, temperature controlled fermentation for 20-25 days in concrete tank. Traditionally drunk with the famous 'huitres de Bouzygues', (oysters) that are harvested from the adjacent Etang de Thau. Also shellfish platter, lobster, crayfish and grilled fish go very well.


Try this with Riseley, a sheep's milk cheese.
