The rich cognac and the ageing time have left their mark on the beer. Both chocolaty and rich as well as dry, acidic, oaky and very moorish.
A dark sour, fermented with our house culture of wild yeasts and microbes, aged for eight months in cognac barrel. Bottle conditioned.
