The tannins are soft but full and the typical Foxwhelp acidity is fairly assertive.
It's bone dry and so great with food, especially salty snacks, very mature cheddar and it has the robustness for lots of rich meat dishes. If you liked their 2018 Chisel Jersey blend then you'll like this - it has similar applications but with the tannins toned down and the acidity turned up. Drink cellar temp.
A blend of Harry Master's Jersey (35%), Ellis Bitter (30%), Yarlington Mill (15%) and Foxwhelp (20%). Each variety comes from a different traditional orchard, all over 30 years old and much older (old orchards). Co fermented in stainless steel initially before half was racked into old oak barrels (ex red wine, second fill of cider, over ten years old) for three months maturation. Bottled still, a year after pressing. This is in many ways an old fashioned blended cider, no messing about.
